Beef Taco Skillet

Ingredients:
1 lb. ground beef
1 can (10 3/4 oz.) Campbell's Tomato Soup
1/2 cup salsa
1/2 cup water
6 flour tortillas (6") cut into 1" pieces
1/2 cup shredded Cheddar cheese
*Next time I am going to add a taco seasoning pack to the ingredients because I think it needed a little bit more spicy flavor.
Preparation:
1. Cook beef in 10" skillet until well browned, stirring to break up meat. Pour off fat.
2. Stir in soup, salsa, water and tortillas. Heat to a boil.
3. Reduce heat to low and cook for 5 minutes. Stir.
4. Top with cheese.
Serves 4
This is a very easy meal that comes from my Campbell's Soup recipe book. It tastes just like an enchilada or soft taco but is served in a casserole like fashion.

    This looks so great when I read it this morning that I made it for dinner. I didn't have any salsa so I just didn't put any. But I did add the pack of taco seasoning like you suggested. It's absolutely delicious! I love the soft tortilla pieces.

    oh and we've had way too much hamburger meat recently so I used chicken. It's still super tasty!

    We have great cooks in this family ... I eat like a king everyday with stuff laura comes up with so Robert is a lucky man!

  3. We tried this and we didn't like it- I have that same cookbook- you're probably a much better cook than I am, so yours probably tasted better- but Ben and I scratched this one off of our list years ago- maybe I should try it again! You go chef Jo!
